Singaporean noodles, despite the name, are not actually from Singapore. They are a popular dish in many Western countries, known for their colorful, spicy stir-fry. Here’s a simple recipe to make them at home:

 

Ingredients:

8 oz (225g) rice vermicelli noodles

2 tbsp vegetable oil

1 onion, sliced

2 cloves garlic, minced

1 bell pepper (any color), sliced

1 cup shredded carrots

1 cup bean sprouts

1 cup cooked shrimp or chicken (optional)

2 eggs, lightly beaten

2-3 tbsp curry powder

2-3 tbsp soy sauce

1 tbsp oyster sauce (optional)

1 tbsp hoisin sauce (optional)

Salt and pepper, to taste

Chopped cilantro or green onions, for garnish

Instructions:

Prepare the Noodles:

 

Cook the rice vermicelli noodles according to the package instructions. Usually, this involves soaking them in hot water until they are tender, then draining and setting aside.

Stir-Fry the Vegetables:

 

Heat the vegetable oil in a large pan or wok over medium-high heat.

Add the sliced onion and garlic, and stir-fry for about 1-2 minutes until fragrant and slightly softened.

Add the bell pepper and carrots, and cook for another 3-4 minutes until they start to soften but are still crisp.

Add the Protein:

 

If using shrimp or chicken, add it to the pan and stir-fry until cooked through.

Scramble the Eggs:

 

Push the vegetables and protein to the side of the pan and pour the beaten eggs into the empty side.

Scramble the eggs until fully cooked, then mix them with the vegetables and protein.

Combine Everything:

 

Add the cooked noodles to the pan, and stir to combine everything well.

Sprinkle the curry powder over the mixture and stir to evenly coat the noodles and vegetables with the spice.

Add Sauces:

 

Pour in the soy sauce, and add the oyster sauce and hoisin sauce if using. Stir everything together until the noodles are evenly coated and heated through.

Season and Serve:

 

Taste and adjust seasoning with salt and pepper if needed.

Garnish with chopped cilantro or green onions before serving.
